Ingredients (Makes about 18-20 energy balls)

  • 1 ½ cups (about 200g) pitted Medjool dates (soft and sticky variety works best)
  • 1 cup (90g) rolled oats
  • ¾ cup (100g) mixed nuts (almonds, walnuts, or cashews)
  • 2 tablespoons cacao powder or unsweetened cocoa powder
  • 2 tablespoons chia seeds or flaxseeds (optional but recommended)
  • ¼ cup shredded coconut (for rolling)
  • 2 tablespoons melted dark chocolate (for drizzling, optional)
  • Pinch of sea salt

Instructions

  1. Prepare the dates: If your dates are dry, soak them in warm water for 5-10 minutes, then drain well.
  2. Blend the base: In a food processor, add the pitted dates, rolled oats, mixed nuts, cacao powder, chia/flax seeds, and a pinch of sea salt. Pulse until the mixture becomes sticky and starts to clump together. You should still see small chunks of nuts for texture.
  3. Check consistency: If the mixture is too dry, add 1-2 teaspoons of water or melted coconut oil. If too sticky, add a tablespoon of oats.
  4. Shape the balls: Scoop out about 1 tablespoon of the mixture and roll it firmly between your palms to form smooth balls. Repeat until all the mixture is used.
  5. Coat and decorate:
    • Roll half the balls in shredded coconut.
    • Roll the other half in extra cacao powder.
    • Place a few balls on a plate and drizzle lightly with melted dark chocolate.
  6. Chill: Arrange the energy balls in a single layer on a plate or tray and refrigerate for 15-20 minutes to firm up.
