Ingredients
For the Chicken Schnitzel:
- 4 boneless, skinless chicken breasts (about 150–180g each)
- 1 cup (120g) all-purpose flour
- 2 large eggs, beaten
- 1½ cups (150g) breadcrumbs (panko works great for extra crunch)
- 1 tsp garlic powder
- 1 tsp paprika (optional, for color and flavor)
- Salt and freshly ground black pepper, to taste
- Vegetable oil or neutral oil for frying (about ½ cup / 120ml)
- Fresh parsley, chopped (for garnish)
- 1 lemon, cut into wedges
For the Buttery Mashed Potatoes:
- 1 kg (2.2 lbs) potatoes (Yukon Gold or russet), peeled and cubed
- 4 tbsp (60g) unsalted butter
- ½ cup (120ml) warm milk or cream
- Salt and pepper to taste
For the Sautéed Green Beans:
- 400g (14 oz) fresh green beans, trimmed
- 2 tbsp butter or olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Prepare the Mashed Potatoes Place the peeled and cubed potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15–18 minutes until fork-tender. Drain well, then return to the pot. Add butter, warm milk, salt, and pepper. Mash until smooth and creamy. Cover and keep warm.
- Prepare the Green Beans While the potatoes are boiling, bring a pot of salted water to a boil. Add the green beans and blanch for 3–4 minutes until bright green and crisp-tender. Drain and immediately plunge into ice water to stop cooking. In a large skillet, heat butter or olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the drained green beans, season with salt and pepper, and toss for 2–3 minutes until lightly golden. Set aside.
- Make the Chicken Schnitzel Place each chicken breast between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin until about ½ cm (¼ inch) thick. Season both sides generously with salt and pepper. Set up a breading station: one plate with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, paprika, salt, and pepper. Coat each chicken piece first in flour (shake off excess), then dip in egg, and finally press into the breadcrumb mixture, making sure both sides are well coated.
