Ingredients (Makes one 12-inch pizza – serves 2-3)

For the Dough (or use store-bought):

  • 1 ball of homemade or store-bought pizza dough (about 250-280g)
  • Extra flour for dusting

For the Toppings:

  • 2 tablespoons olive oil (plus extra for drizzling)
  • 150g (5.3 oz) boneless chicken breast or thigh, cut into small bite-sized pieces
  • 1 large red onion, thinly sliced
  • 1 large red bell pepper, roasted and sliced (or use jarred roasted peppers)
  • 150g (1.5 cups) shredded mozzarella cheese (or a mix of mozzarella and cheddar)
  • 2-3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika (optional, for extra flavor)
  • Salt and freshly cracked black pepper, to taste
  • Fresh basil or parsley leaves, for garnish
  • Red chili flakes (optional)

Instructions

  1. Prepare the Caramelized Onions Heat 1 tablespoon olive oil in a pan over medium heat. Add the sliced red onions and a pinch of salt. Cook slowly for 12–15 minutes, stirring occasionally, until soft, sweet, and golden brown. Set aside.
  2. Cook the Chicken In the same pan, add a little more oil if needed. Season the chicken pieces with salt, pepper, smoked paprika, and half the minced garlic. Cook over medium-high heat for 5–7 minutes until lightly charred and fully cooked. Remove from heat and set aside.
  3. Roast the Red Pepper (if not using jarred) Place the whole red pepper under a broiler or directly on a gas flame until the skin is charred. Let it cool in a covered bowl, then peel off the skin, remove seeds, and slice into strips.
  4. Preheat the Oven Place your pizza stone or baking steel in the oven and preheat to the highest temperature (ideally 475–500°F / 245–260°C) for at least 30–45 minutes. The hotter, the better for a crisp crust.
  5. Assemble the Pizza On a lightly floured surface or parchment paper, stretch the pizza dough into a thin 12-inch circle. Brush the dough with olive oil and sprinkle with the remaining minced garlic and dried oregano. Spread a thin layer of mozzarella cheese, then evenly distribute the caramelized onions, roasted red pepper strips, and grilled chicken pieces. Top with the remaining cheese.
  6. Bake the Pizza Carefully transfer the pizza onto the hot stone. Bake for 10–14 minutes until the crust is deep golden with some charred bubbles on the edges and the cheese is bubbly and slightly browned in spots.
